Chip's lunch: August 20, 2010

Chip's back from a short trip to California, so we've got one lunch for this week. I packed Chip some trail mix for the plane ride to California, so we are all out of dried fruit. I wracked my brain for something to put in the side compartment, when it dawned on me. What has been my food of choice* since he left? Graham crackers! I added some natural peanut butter, and made little sandwiches.

*When Chip leaves town, I am notorious for going overboard on junk food. Last time, it was Lemonheads. In the past, it's variously been frozen garlic bread, Cheetos, Laffy Taffy, and Tofutti cuties.




Sandwich on organic whole wheat bread with Smart Deli roasted "turkey" slices, hummus, Cheddar, and organic greenleaf lettuce, organic banana, graham crackers with natural peanut butter, Caprese with Campari tomatoes, mozzarella, and basil from our garden, and an organic Fuji apple.

  1. Hi! I ran across your blog and it inspired me to buy my own Laptop lunch boxes for my husband and myself. I travel a lot for work, but I carry mine with me when I travel so I can avoid fast food lunches with my coworkers and pack fruit, veggies and PB&J instead. Thanks so much for the ideas!

  2. These probably seem like really "dumb" questions, but how do you keep your apples and bananas from browning? Maybe Chip doesn't mind? Also, Does he heat up anything in his box and how? I would LOVE to start packing lunches like this for my DH. Your blog is VERY inspiring!!! Thank you!

  3. Usually the apples stay pretty good. He doesn't mind a small amount of brown. Some apples start to brown right away, so I squeeze on a little bit of lime juice (I always have limes around because I love lime in my water).

    The bananas don't get brown, but if I cut them in a bunch of little slices, Chip says they get slimy. So two or three chunks are OK...little slices are not.

    He does heat up some things (soup, noodles, rice, etc). It's easy to take the inner containers out of the big outer container. He works in an office, so he has a microwave in the kitchen there. If he didn't have a refrigerator and a microwave accessible to him, I would pack differently for sure. Though when we were bike messengers, we realized that 7-11 and other convenience stores have free microwaves. We would duck in and heat up something for lunch that we'd brought from home.
