My lunch: June 20, 2011
This weekend, just as I was leaving the farmers' market, I noticed a vendor I hadn't seen before. He was selling green stuff in a baggie...and no, despite Clintonville's hippie reputation, it wasn't pot. They were sprouts! I'd been searching for pea shoots for months, maybe over a year, and had had no luck finding them. Chip's mom got some at her local organic market, and served them to us on a salad. We had them again at basi italia on their version of the caprese salad (their house made mozzarella, pea shoots, pesto, and tomatoes). I have finally found them again and am so excited. Not only are they super nutrient-dense, they have a mild flavor and fun texture that add a neat twist to a salad.

Chip's lunch: June 20, 2011
We had some friends over last weekend, to celebrate my job and their recent home purchase. Since their apartment was all packed up and ready to move, Laura brought dinner ingredients to our house and cooked here. She made this unbelievably delicious recipe, with just a few ingredients (including some beautiful asparagus from the Clintonville Farmers' Market). Laura is an amazing cook and baker, and has made us some fabulous food since we met her last year, including vegetarian Coneys, roasted vegetable lasagna, and raspberry scones with lemon icing (yep, I copied those too).
Which brings me to the scones. I was out running a few months ago and stopped at Laura's place on my way home (about 4 miles into my 5-mile run). As I was leaving, she offered me a scone, and far be it from me to turn down a baked good. She sent me home with two of these raspberry scones, with a lemon glaze that she invented herself. I chuckled as I ran the last mile, scones in one hand and iPod in the other. Some people run with energy gels; I run with scones. As soon as I got home, scone #1 was gone, and #2 was gone soon afterward. Even Chip liked it, and he flat out does NOT eat berries. I got some not-so-beautiful raspberries at the farmers' market this weekend, and figured they didn't have to look pretty to adorn scones. I veganized the recipe and used whole wheat flour, and it still turned out great. So great that Chip even ate these ones too, raspberries and all. Seriously, you need to try this recipe.
How to veganize:
-Instead of buttermilk, use 1 tsp lemon juice per cup of vegan milk (I used almond milk); allow to curdle for 5 minutes before adding to recipe.
-Instead of butter, use vegan margarine (I used Earth Balance)
-Instead of egg yolk, sub 1 tablespoon ground flaxseed and 3 tablespoons vegan milk

Chip's lunch: June 16, 2011
I decided it was finally time to try my hand at falafel. And I figured that while I was at it, I would try some hummus too. I mean, it's just lots of chickpeas, right? It's just mixing things together and making them taste good. I should've remembered why I don't make hummus. The reason is that I'm terrible at it. Absolutely horrible. Maybe I haven't found a good recipe yet. Maybe the chickpeas I use (canned organic) aren't the best kind for hummus. Perhaps my crappy blender isn't the appropriate tool to use to mix it all up. Whatever the reason, this hummus was not delicious, though it was palatable. Chip seemed to think it was "fine," but I was just not a fan.
The good news is that this falafel was much better than the hummus was. Per the recipe's instructions, I formed it into patties about the size of your average hamburger. Instead of deep frying, I sprayed a pan with olive oil, and sort of pan fried it that way. I cooked it on high enough heat to get it crispy on the outside, but soft on the inside. It was actually quite good, and it was easy enough to make. I prepared the patties ahead of time (on Sunday), and froze them. I defrosted them during the day on Wednesday, and cooked them up for dinner in no time.

Homemade falafel, banana, homemade trail mix with organic Sultana golden raisins, dried cranberries, organic sunflower seeds, raw almonds, and organic dark chocolate chips, homemade hummus, and blanched veggies (local asparagus, organic red bell pepper, organic yellow bell pepper).

Chip's lunch: April 20, 2011
Last night I was leafing through Terry Walters' cookbook, Clean Start, to get some inspiration. I've felt really blah about cooking lately, and needed something to get my butt back in the kitchen. I leafed through the Spring section of the book (it's divided into seasons, as it focuses on eating seasonally), and found a delicious-looking recipe for split pea soup. I've never really had split pea soup, though it is traditionally part of Slovak Christmas Eve dinner. I decided to give it a shot, and wow! I thought it would taste or feel like it was lacking something, like salty smoky ham, or some kind of creaminess, but this stuff was amazing. Low fat, high in protein, full of veggies (onion, celery, and I added 2 cups of chopped carrots), and delicious. And plenty of leftovers for the freezer.
We ate our soup with some homemade bread. I finally got a stand mixer, and have been trying to take full advantage of it. I made bread for the first time ever, from a really basic recipe, and it turned out surprisingly well! I used 5 1/2 cups of whole wheat flour and 1/2 cup of ground flax seed. Chip has been enjoying it with PB&J, and it also went really well with this soup.

Chip's lunch: April 7, 2011
The weather was beautiful here yesterday evening, so we grilled up some tofu and ate on the deck. I used the same Cajun spices as last time, and it was delicious as usual. Also, I just read in this article that roasted red pepper hummus is a great snack, and I'm glad Chip likes it so much. We get the hummus and pita chips at Costco and Chip goes right through them!

Chip's lunch: March 31, 2011
Ah, we've been busy since Chip was gone. Just before he left, we took in a litter of orphan foster kittens. Four two-weekers with no mom. We bottle fed them around the clock, and once Chip left, I was operating on some serious sleep deprivation. Seriously, I don't know how actual parents do it. This was traumatic enough for me. Then, we picked up a Lab-mix girl who came in on a transport from Springfield, Missouri. The shelter there burned down, so she'd been living in an outdoor run. On top of that, it's a heartstick shelter, and, well...just google heartstick, and you'll understand why we couldn't let her die there. She is a younger girl, and one of the rowdiest dogs I've ever met. Fortunately, she and Cal are best buddies, and they tire each other out daily.
Since then, our greyhound foster, Starz Artiste, was adopted by a wonderful family. She is such a lover, and I know they enjoy that about her. The kittens have grown out of the bottle feeding phase, which means we get to sleep again. Penny underwent Immiticide heartworm treatment, and is healing very well. And we got one of our old greyhound fosters back: Perpetual Puff. She was having separation anxiety from being left alone for 9 - 10 hours a day. She's doing better with us, and I'm sure she'll be adopted any time now.
My favorite photo of Artiste, gently resting her head on my shoulder:

The kittens...
Carl (named after Chip's dad, because both have mustaches):

Patty the tabby:

Betty (we thought she was a boy until recently; we had named her Benny):

And Bethany (with Betty and Patty), who is so mellow and laid back that we named her after Bethany Hamilton:

And here's Penny. She's just gorgeous, right? We are fostering her through For the Love of Labs Rescue, and if you or anyone you know is interested in her, we can arrange transport to almost anywhere.

And here's Miss Puff (yes, that is Puff spit on my shirt):

And lunch, of course!

Organic Fuji apple, pita chips, spicy red pepper hummus, pecans, organic dark chocolate chips, organic salted sunflower seeds, banana, and organic quinoa with organic spinach.

Chip's lunch: March 15, 2011
Um, does this look familiar? I realized after I'd packed it that it was basically the same lunch Chip got less than a week before, with slightly different ingredients in the rollups. He didn't notice, so I didn't say anything either. Once again, the rollups were a great way to use a few things up before Chip's departure for Italy.

Organic Fuji apple, banana, organic dark chocolate chips, raw almonds, dried cranberries, homemade vegan carrot spice muffins, and whole wheat rollups with organic avocado, local alfalfa sprouts, Campari tomato, organic red onion, and organic spinach.

Chip's lunch: March 9, 2011
We're back in action! We've been doing a lot of traveling over the past few weeks, and things have been so busy. First, we spent a long weekend in Chicago with my brother, and we finally got to meet his girlfriend of almost a year. We had an amazing time with them, and it was so fun to finally see Chicago. I can't believe I'd never been there! A few days after we got home, Chip headed to Italy for the Milan-San Remo bike race. He ate some amazing Italian food, and saw a lot of beautiful sights. Italy is on my list, and I can't wait to get the opportunity to visit once we're living in Europe!
In Chicago, we went to Friends Sushi, and I ate an actual bento box (teriyaki tofu, tempura vegetables, rice):

And we checked out the Chicago River, dyed green for St. Patty's Day:

I packed this lunch a few days before we left for Chicago. The rollups were a great way to use up a few things before our trip.

Chip's lunch: February 24 , 2011
Have you ever had harira? Lavash Cafe, one of our favorite local restaurants, always has tons of vegetarian options, usually including their soup of the day. In December they had harira, which they called "spicy vegetable soup." I tried it two more times before finally asking them, "what the heck is this delicious stuff called?" They told me, but they wouldn't give me their recipe. I found a lot of recipes online, many of which involved meat and spices I don't have (and probably wouldn't use otherwise). This recipe fit our needs, and it turned out so well! It has garbanzos and couscous for protein, and tons of veggies. It has a tangy tomato base, with a slow heat from chipotle and paprika. It can be customized with toppings, like harissa paste, dates and raisins, or chopped hardboiled egg. This made a giant pot, and there's plenty of harira left in our freezer.

Chip's lunch: February 15, 2011
Chip really enjoyed his last crackers and cheese lunch. He was able to kind of snack on it all day, and the non-finger foods that were in it didn't actually get eaten because he was too busy to take a few minutes to heat them up and eat them with utensils. That sounds ridiculous when I write it out...but he is a really busy guy! I think he could eat all of this lunch with his hands, except the tofu. Yes, we eat green beans and asparagus spears with our hands...totally normal, right?

Kashi whole grain crackers, local pepper jack cheese, local Colby cheese, banana, dried cherries, organic dark chocolate chips, dried cranberries, tofu scramble, and steamed green beans and asparagus.

Chip's lunch: February 4, 2011
I invented this pizza for dinner last night, and kept calling it "Mexican pizza"...until I looked up what Mexican pizza actually is. This isn't it. But it's modeled after the Southwestern Pizza from Whole World Natural Restaurant. I haven't actually been there, but since it's a vegetarian restaurant, and it's so close by, we are hoping to go soon. Chip and I have a deal that every time one of our fosters is adopted, we go out to dinner. So as soon as Hendrix is adopted (I picked him up last night), we'll be headed up the street to Whole World!
I made this crust with the usual recipe, with whole wheat flour. This was the third time I'd made it, and it turned out better than ever! I made a double recipe, and used half right away while freezing the other half for later. I cooked up some black beans with cumin, garlic, and chipotle, then mashed them and used them as the sauce. I topped Chip's half with local pepper jack cheese, and then added some organic corn, Campari tomato, and chopped organic yellow bell pepper. We topped it all off with salsa and avocado and YUM! We both enjoyed it, and are glad that we have plenty of leftovers for both of our lunches.

Chip's lunch: November 12, 2010
The night before I packed this lunch, I decided I was going to make cornbread from scratch. I love cornbread, and I'd never made it from scratch before. I bought my cornmeal and set to work finding recipes. Being a northerner, I never really realized that there are so many kinds of cornbread. We have the sweet kind (think Jiffy mix), and that's it. But in the South, they eat unsweetened cornbread, and in the Southwest, there are corn cakes, which are sweeter and often have vegetables in them (like corn kernels, hot peppers, etc). I finally found this recipe, and decided to lower its fat content and try it out. We both liked it a lot...it was sweet enough to be a treat, but not too sweet. I made four mini loaves and they were gone in just a few days.

Chip's lunch: November 10, 2010
That's right...still using up the chili I made last time Chip was out of town. It's been so convenient for the nights I don't feel like cooking, and for a quick easy lunch. It also makes a neat treat for friends. Friend does me a favor, I give friend chili. Friend brings me food, I give friend lentil soup. Friend tells me I look pretty, I give friend chili AND lentil soup. And so on.

Chip's lunch: November 8, 2010
This is the first time that Chip packed his whole lunch himself, and took the photo. Of course, he packed up leftovers from the dinner that I prepared, but he still did it himself. This rice is Chip's favorite. It has surpassed his childhood memories of chicken flavored Rice-a-Roni, which I never thought possible. Fried rice with lots of salt and butter...it's hard to beat that!
I breaded the tofu with this seasoning. We don't have it often, and it's a really special treat for Chip. He usually doesn't like peanut flavored stuff, or spicy stuff, and this is both. Tofu has to bake for a really long time to get that nice chewy texture, but it's definitely worth it.
Also, I'd like to take this opportunity to introduce our latest greyhound foster, Gabe Cuda ("Cuda"). He is a baby by retired racer standards, as he broke his leg at 17 months old. Greyhounds typically begin their careers at 18 months, so he has never officially raced (though he did schooling races). He's in some pain from a surgically repaired fracture in his right hock, but we are working on scheduling him to get some of his hardware removed. In the meantime, he is enjoying the fluffy beds in our house, and the companionship of our dog Cal.

And lunch:

Brown rice pilaf, CSA Gold Rush apple, organic Thompson raisins, organic dark chocolate chips, organic dried cranberries, steamed organic broccoli with sea salt, black pepper, and lime, more broccoli, and baked organic spicy peanut tofu.

Chip's lunch: November 2, 2010
I made sure we had plenty of leftovers from dinner so Chip could have a nice lunch. But...he packed this up himself! He even took the photo. This isn't what I would've packed or how I would've packed it, but he loved it, and that's what matters!
Also, I made turnips for the first time ever. I'd eaten them a few times growing up, but Chip had never had them. I found this recipe and veganized it. Chip enjoyed it and said he never would've guessed that he wasn't eating potatoes.

Gardein scallopini (grilled with Cajun spices), steamed asparagus, banana, Clif Builder bar, homemade trail mix (organic raw cashews, raw almonds, organic chocolate chips, organic Thompson raisins), and mashed CSA turnips.

Chip's lunch: October 11, 2010
This was Chip's last lunch before leaving on his business trip. For reasons I can't fathom, I bought a bunch of cheese the day before his departure. I don't really eat cheese. I have no idea what I was thinking. So I cut up a bunch of it and put it in Chip's lunch.
I was also able to include some leftover potstickers that I made with this recipe. I'd never made potstickers before, and I love them so much. I decided to just go for it, and spent an hour researching recipes to find one that sounded tasty and didn't require a food processor (I don't have one). They turned out really well, and tasted like they were from a restaurant! We were able to freeze the leftovers and they make a quick, easy, healthy snack. I steamed them instead of frying them, to reduce the fat content. Also, I did fry the first batch and they all stuck to the bottom of the pot, so...I decided not to do that again! You'd think I'd have realized that they're called potstickers for a reason.

Chip's lunch: October 6, 2010
These mushrooms have been sitting in the fridge for a while, being neglected and overlooked. A cool rainy fall day was the perfect time to roast them with some bell peppers and make Clean Eating Magazine's Chicken & Portobello Focaccia...minus the chicken. It's quick and easy, and we had the tomatoes and basil growing in the garden. I have to say that even though our garden wasn't a huge success, I've really enjoyed having it, and I hope next year's garden is even better.

Chip's lunch: October 1, 2010
OK, I'm not gonna lie...sometimes, when I buy things and don't like them, they end up in Chip's lunch. Exhibit A: this bagel. It was kind of sweet, even though it's supposed to be just whole grain. I don't do sweet bagels. Chip doesn't care though...even though he can be picky, I often feel like I can just throw anything into his lunch. He loves eggs, and loves breakfast sandwiches even more. This lunch was a huge hit!

Chip's lunch: September 30, 2010
This is another one I was able to make in the morning. Much to Chip's chagrin, there was no cheese around for his hot dog...but that also means that this lunch is vegan! Also, we've been enjoying all the different apples we've been getting from the farmers' market and through our CSA. This one is a Golden Delicious from the CSA...yum!

Chip's lunch: September 29, 2010
I've been trying to get up early enough to get lunch packed in the morning, so I can get a picture of it in the morning light. Did you notice that Chip didn't get lunch yesterday? Yeah. I sleep like a rock. I would love to wake up early enough, but I never even hear the alarm clock! I'm working on it.
Anyway, I threw this together this morning because I actually got up on time. We had dinner out with friends last night, and no leftovers. So I did what I always do: threw a bunch of stuff on a wrap and cut it into maki. It looks pretty, it's full of veggies, and Chip loves it.
The pumpkin bread is the usual recipe. I think this is the fourth batch I've made. And it happened...I ruined it. I do that with everything. I watch it, eat it, listen to it, etc. so much that it stops being awesome. Chip tries to help me, but it's inevitable that this happens from time to time. So...we're going to make it through this batch and then maybe enter an open relationship with our baked goods...maybe it's time for some cookies next, or maybe zucchini bread?

Farmers' market steamed green beans, homemade vegan pumpkin bread, organic Sultana golden raisins, organic dried cherries, organic dried cranberries, organic dark chocolate chips, organic applesauce, whole wheat rollups with hummus, Roma tomato from our garden, CSA kale, organic carrots, organic pine nuts, and organic mushrooms.
