Chip's lunch: May 24, 2011

Unfortunately, our Costco has stopped stocking the Gardein 7-grain Crispy Tenders. We haven't been eating tons of them now, because instead of costing about $.10 each from Costco, they're at least $.50 each from the grocery store. I needed a quick lunch on this day though, and these are about as quick as it gets!

I got goldenrod honey at the farmers' market from the guy in the photo in this article. Goldenrod honey is extra fancy, and has a distinct butterscotch-y taste. I've been enjoying it in green tea, but I can't say Chip has noticed how tasty it is himself.

Chip's lunch: January 3, 2011

Happy New Year! As has become usual now, we are only around for a few days. We spent Christmas in Hawaii, and now we have a few days home before Chip goes to Spain for work and I go home to visit my family in Maryland. Life will be like this for the forseeable future, with lots of trips in the next few months.

After returning from Hawaii, we made a run to Costco. To our delight, Gardein 7-Grain Crispy Tenders had returned! I was so bummed out when they were discontinued, because it was a great price, and they are a relatively healthy convenience food. We're so glad they're back!

Chip's lunch: November 5, 2010

Gardein is back in our house in a big way. For a while, we had been buying the 7-Grain Crispy Tenders in a bag of 50 from Costco. It was only $12 or so...really cheap. When that was discontinued, we went into Gardein withdrawal, because at the grocery store, a pack of 10 is $5. When these went on sale half price at Kroger, I *may* have bought them out. We like them that much. They're super convenient, have tons of protein, taste really good, and are clean. So, they're pretty much perfect.

As always, Chip was extremely excited for the PB&J rolls. He expressed his excitement in the morning when he saw me making them, and even when he got home, he reminded me how much he'd enjoyed them. Seriously...it's the simple things that make this guy happy!

Chip's lunch: September 15, 2010

I threw this one together this morning. I was out later than usual last night, doing a home visit for a prospective adopter for one of our fosters. If all goes to plan, she will go home on Friday! I saved asparagus from last night's dinner for lunch, and everything else took just a few minutes this morning.

Chip's lunch: June 14, 2010

Week one of our CSA was a success! We picked up our share on Saturday morning. We got: lettuce, peas, chard, fresh sage, and massive amounts of strawberries. Shelling peas by hand (which I'd never done before Saturday) really makes you appreciate every last pea when you're cooking! We're enjoying everything so far, and a few things have made their way into this lunch. Too bad Chip will never eat a strawberry...we've got plenty of them!

Chip's lunch: June 2, 2010

So remember back in the day, when I said that Chip and I would pay a lot of money for vegetarian chicken tenders that taste like Burger King's? We've found them. And they're available at Costco, so we don't even have to pay a lot of money. We're on our second huge bag of these Gardein 7-Grain Crispy Tenders and are loving them. They're low in fat, high in protein, and super convenient.

Also, I'd like to draw your attention to the salad below. You can't see it at all, but I promise it's there: lettuce that I grew in our backyard! On a whim a few weeks ago, I bought a little tray of tiny Bibb lettuce sprouts. This lettuce has grown out of control to the point that I've even given some away to friends. It was totally a worthwhile investment (just $2)! I just planted some more seeds so we can have more lettuce later in the summer. Yum!

Sometime soon I'll have to post about our garden. This is my first year having a garden and I'm determined to do it right. We are attempting to grow: watermelon, strawberries, green beans, Bibb lettuce, some other kind of lettuce (I don't know what kind it is, but it looks delicious), Roma tomatoes, and basil. Everything is in pots at the moment, and we're hoping that this weekend is when we'll finally get our raised beds built.

Chip's lunch: March 15, 2010

Once again, we had such a busy day that I was a bit too tired to make lunch on Sunday night. And once again, I'm making up for it with a caprese! And some Morningstar Chik'n Nuggets. We were at the grocery store this evening when Chip remarked that he would pay good money to anyone who could make a vegetarian version of Burger King chicken nuggets. We both remember those from our childhoods. I think the secret is black pepper. They were so delicious. So...we picked up some Morningstar and will just have to pretend, I guess.
